Last week St John Bosco College, Engadine hosted My Kitchen Rules celebrity chef and judge, Colin Fassnidge (a former student of Christian Brothers O'Connell School, Dublin), together with chef Will Lovehill (former student of Christian Brothers, Lewisham), who shared their expert knowledge and inspired the school's Year 11 Hospitality students.

Colin Fassnidge is the Executive Chef of 4Fourteen and current restaurateur of Banksia Bistro. Will Lovehill, former chef of the famous Aria and Pink Salt Restaurants, and current owner of ‘Chur Burger’ (which was recently voted best burger in Sydney), spoke to students about modern food trends and their journeys in following their passion, and with running their own businesses.

This experience took place in the college's modern commercial kitchen which only opened earlier this year. The newly designed industry standard full commercial kitchen features stainless steel throughout, a large walk-in coolroom, combi oven, commercial mixer and dishwasher, plus an espresso coffee machine. The two chefs were very impressed with all areas of the new Technological & Applied Studies (TAS) building, with so much state-of-the-art equipment and facilities that are fully up to par with industry standards.

The build-up for the special visit was extremely exciting and highly anticipated. On the day students were star struck and fully engaged throughout the entire morning session. Through this interactive experience of tasting herbs and flavours, students learnt about mixing sweet, salty and savoury ingredients to balance flavours, to enhance sauces and thus create memorable meals. One of the food tastings was blue cheese combined with white chocolate, which are tastes one would not normally think about mixing – but the final taste was exceptional and unique, a real talking point for the students.

Colin and Will emphasised the need for students at St John Bosco College to take advantage of the wonderful resources available to them in whatever their culinary interest might be.

The students and staff of Bosco College were very grateful to both chefs for taking time out of their busy schedules to visit them and impart some valuable food tips. This incursion is one that students will never forget in their gastronomic lives – it’s certainly not every day that one gets to meet high profile celebrities in a classroom!

The culinary visit was organised by one of the College’s enthusiastic and experienced Hospitality teachers, Nita Panagio, whose motto to her students is ‘Give everything you do your best, put your heart and soul into it, and you will always succeed’. These two amazing celebrity chefs have done exactly that and are shining examples for the college’s budding future chefs.
